The fruit is sourced from vineyards from a single vineyard (Roccolo) with vines which are 20 years old. Vinification: matures 6 months in barriques and 6 months in steel tanks, then second fermentation in the bottle according to the Champenoise method. The wine is aged 60 months on the lees.
